If I understand you correctly, you want to archive the oldr meail on your client system, right?
This is simple, create new a new mailbox, make sure it's "On My Mac" and then move the mail from the imap server to that folder.
If you want to create a point-in-time archive, you can close your mail connection, copy the mailbox files from the server to your mac, and import those to local mailboxes, then truncate the file on the server. Obviously, this only works if you have access to the server or a friendly sysadmin. You'll need to recreate the folder on the imap server, but that's easy, again, if you have access to the server (and it's a unix system!)
simply navigate to your mail directory on the server, do the command touch <foldername> making sure it's spelled exactly the way you want it. This creates a file of that name, and the imap server handles the rest of the housekeeping.
This way, if you have Tiger at least, you can also use psotlight to search your mail.
