I'm tiring to edit sound files using Quicktime Pro but it wants to save
everything as a movie file. There has to be a fairly simple way of doing
this. Any ideas out there?

What kind of editing are you doing? SoundConverter can convert many filetypes, if that's what you want.

There are many sound editing softwares, depending on what you need to do. Most of them can save to popular filetypes, usually with AIFF as the default.

My choice for simple stuff (other than GarageBand which always mixes down to .aif files): Sound Studio.
