Set up screen saver to come on relatively early--I
love the cosmos screensaver; it has different images
on each screen.

When I try to get back to my active screens, sometimes
it takes only a mouse click, sometimes a space or a
few scroll-wheel clicks, but often I need to use
force-quit 3-finger salute-enter, and sometimes must
repeat this numerous times.

If I'm persistent, I can get back to my work; I just
wonder how to fix this.
I'm on dialup, so have resisted the OS update.

This is purely conjecture since I have kept my beige at 10.2.8. I am willing to bet that since the beiges are unsupported in 10.3 and above, that no updates will help.

What video card do you have? There is an update for the Radeons for 10.3 and that may help. It is also smaller than an OS update so you might want to consider that first.

Also, when I put in a floppy, it wasn't seen on the
desktop or in finder windows; again, what gives? OS
update time?

Internal floppy support was dropped starting with the beta of OS X and has never been added by Apple to any release. There is a hack out there to enable floppies, but all reports I have seen is that it is only occasionally successful. I was not able to get it to work at all. IIRC, Bruce Johnson got it to work, albeit very slowly in his beige and someone else did get it to work in their beige.

The general consensus nowadays is to just get a usb card and usb pen drive. You can get cards under $10 shipped if you check out dealmac.com. You can also get a 128MB pen drive (equivalent to over 90 floppies) for $15 shipped if you check out dealram, less if you don't mind dealing with rebates.
