What version of OS X? Functionality has changed considerably between various versions.
Start OS X, and select Help from the Finder, there's a section in there about using OS X from the perspective of an OS 9 user.
Don't be put off by the differences, pretty much all of it is largely appearance.
The Dock, at the bottom of the screen is the equivalent of combining the Apple menu and the list of running apps from the upper right hand corner of the old Mac.
In the dock is an icon that looks like a wall plate with a switch in it. This is the System Preferences, which is the equivalent of the Control Panels.
A good book is David Pogue's "Mac OS X: The Missing Manual" series. There's a version for each of the major Mac OS X versions.
