Been there, done that.. get yourself a pci ide card and your problems shouls be solved.. I found that foe whatever reason.. mac osx doesn't like booting drives (other than cd) off of the ultra ata port, and also doesn't like it mixing drives and cd on the ultra ata either..
AT least you got the processor to run at 840.. my attempt was with a pre-production board and after doing everything you did, the board only seen the processor as a 550.. what a (explitif here).. Word of wise.. if you decide to replace the ide connector.. make sure you use a 15 watt iron.. I used a 40 watt iron and burnt traces off.. screwing the port for good.. get an ultra ata pci card and you'll be fine..
