Is there something similar to a KVM switch that will work for ADB

There are but I don't recommend them. ADB isn't designed for hot
swapping, which includes switching. There is a possibility of
damage to either the keyboard or computer. There are also
configuration settings sent to keyboard and/or mouse on startup
which will get lost when you switch. The mouse in particular tends
to get slow when this happens.
Most *good* ADB KVM switches will switch disconnecting and
reconnecting the pins in the proper order, so you should be ok in
this regard.
Video can be switched but it's best to do so with VGA. If you
startup without a monitor connected the computer will likely not
boot properly as it doesn't know what monitor to configure for.
Use Apple-VGA adapters on the computers then VGA cables to a switch
box which is connected to a VGA monitor. This will avoid the problem.
