SATA drives are being actively developed, so improvements like the 32 MB cache are available on SATA before they appear on PATA drives. I have one with the new large cache and it performs very well. I'm using a SeriTek/1V4 which boots 3 SATA RAID 0 drives in my G5/Leopard. It is well-supported, with firmware and drivers available for G5s, G4s (both 10.4 and 10.5) and Windows. http://www.firmtek.com/seritek/seritek-1v4/
