Howdy,
  That should work.  The only time you really notice a slowdown is when
you are doing something like ripping CDs.  Then, you are pushing data to
both devices on the same IDE channel.  Make sure you set the jumpers on
the drives so that the hard drive is master and the optical drive sis
slave(or vice versa).  Apple had a bad IDE chip on early B&W that would
corrupt if you put two IDE devices on the same channel, but those
defective chips were long gone when the G5 was made.  Apple would have
had to do something intentional to cause a similar problem on the G5.
