QT Pro (possibly with Perian installed) will deal with SWF files, and let you convert them. The others mentioned deal with flash video files (.flv) like those on YouTube. My favorite too for those is cosmopod, a Safari Plugin. Perian also lets you deal with .flv files in QT.
