Audacity is one that I've used in the past; the old versions used to
be glitchy with certain audio files, but I'd guess the new versions
are more stable. Here's a link:

If you're willing to spend a little money, Audiocorder is a dedicated
recording app, (it has more recording options, and a sound-triggered
recording option. In my experience it's more stable also.) it's 19.99
to buy, but you can use the free trial. The trial just puts a
recording of a lady saying, "thank you for trying audiocorder" at the
beginning of every recording, but that is easily edited out with other
apps.
