You MIGHT be able to change the number by hacking into the resource files for iTunes with Xcode, but there's no guarantee it'll work. 1024 x 768 is the lowest officially supported resolution in OS X.with 1024 x 600 you're going to run into situations where the dialogs just won't fit.
