Some thoughts (I can't help much):

Are you doing a MBR or GUID installation?
Is the BIOS fully updated (v.A03 seems to be current)?
It's possible that BIOS settings are a problem?

I've used the XxX 10.5.6 final, there's a new iATKOS 10.5.7 install  
DVD I haven't used. I've had best luck with the Voodoo kernel on my P4  
hacks.

If you Google search "Dimension 3000" hackintosh; you'll find some  
others trying to do the same. I'm unfamiliar with this model, but it  
appears others have used the Voodoo kernel and the ICHx chipset  
drivers, but still had some problems. I think the video will probably  
be a shortcoming on this model, and it appears there's no good upgrade  
pathway. You have enough RAM? If you have a USB DVD drive and USB  
booting is supported, you might try that for the installer.
