System Preferences --> International --> Language; either drag and drop or (if
not in the list: "Edit List...")
In German:
Systemeinstellungen --> Landeseinstellungen --> Sprachen ("Liste
bearbeiten...")
It takes effect once the applications are restarted. You may want to log off
and back in again to catch every application.
I just tried it to change my system language to English. Worked well for my
user account - everything was English after a loging off and back in again.
(There may be another way to restart at least the dock...)
One thing I couldn't change is the login screen itself. It remained German, so
I restarted Mac OS X to double-check but it stayed German still.
I wander if there is a way to completetly set a different system language.
Mac OS X is based on Unix and it's alway *very* easy to set a different locale
(mostly it is an environment variable that controls the language and
everything).
