If your tracks are in FLAC or other non-standard formats such as OGG- 
Vorbis, iTunes doesn't allow cover art. The only solution I'm aware of  
is to convert FLAC or other non-standard formats into standard iTunes  
formats. Normally, for FLAC this would be Apple Loseless. For OGG and  
other lossy formats you'd probably want to convert to MP3 or AAC.

Once the files are in a standard Apple format, i.e. Apple Loseless,  
MP3 or AAC (and WMP on Windows iTunes), then you should be able to add  
cover art using the Get Info>Artwork tab. In some rare instances,  
supported format files may be corrupted and not accept Artwork or  
other fields. In this case, the only solution is to make a new  
duplicate file of the same format and bit rate using the "Create <file  
type> Version" command under the Advanced menu (you set the <file  
type> in the menu iTunes>Preferences>General>Import settings button).

It's a good idea to check the file size of your cover art and reduce  
overly large files to something more reasonable. For example, some  
large images can be several MB or larger in size, and a separate copy  
is retained for each track of an album (if you add art to each track  
rather than a single track). I like for images in the 400-500 pixels  
squared range to be about 100Kb or so in quality, but this is your  
choice, it simply wastes a lot of HD space otherwise.

Also, you might want to try and clean up these old vinyl rips to  
remove the clicks, pops and needle hiss. There's lots of software for  
doing this, but it's time intensive and your mileage my vary depending  
upon how good or bad the rips are.
