I have a Sonnet 1.2 GHz (single) in my Cube and it runs 10.5.8 well. Very few processor upgrades work in the Cube and you will need to add a base fan to expel heat. OWC currently sells PowerLogix Cube upgrades which come with an 80mmm base fan. I have a PowerLogix upgrade in a Sawtooth that I'm very happy with (although they no longer seem to be updating their software). In my experience OWC is very good with customer service.
