Quad G4 (is it possible to take the two G4s off the other Mac and
stack them into the Leopard candidate?)

No. Not even remotely...how would you possibly 'stack' them? where would the second set plug in?

Dual Hard Drives (how could I take the 30 GB HD out of the other Mac
and stick it atop the 30 GB in the Leopard candidate?)

The existing disk bracket and cable support multiple hard drives; the second one mounts directly over the first.
