I'm having a problem that sounds pretty similar. Occasionally while sleeping, my G5's fan(s) (I can't tell from outside which ones) start screaming away at full speed. When this happens, though, the system is also (apparently) still sleeping but won't wake up. Nothing goes into any of the log files after this point, which appears to confirm that the system is indeed frozen.
However I don't have an AirPort network--just 10BaseT. I do see some network events in the log files but haven't tried yet to correlate them with the fan issue.
