Stealth mode.... You mean you want ports blocked and not responding to pings? Why? And why screw around trying to do it over one interface and not all?

Well, if you need, just set it up in the firewall. Apple's interface is your typical light GUI. Just hit the firewall directly. See 'man ipfw'.
