You could do a block-by-block copy of a whole drive. Of course, that image would be useless unless you have a destination drive that is *exactly* of the same geometry (including bad block maps etc).

Back up each file system (volume) individually. That's the point of having individual file systems (partitions) - they are separate from each other.

If the issue is that you're trying to stuff them all onto one target volume,,, then back up the volumes into sparse disk images.
