Should I use OS X.3 Panther (32 bit), the one that i already have.
  or X.4.11 Tiger (64 bit)?

IMHO Tiger is the smoothest, best optimized version of OS X. Snow Leopard may be as good or better but I've never used it and you can't use it either on your iMac.
