What? Of course you can make folders in Mail. You can also set rules to move 
mail into folders based on a lot of different criterion.

You can also use rules to set colors either for the text or for the background. 
(both refer only to the text or background of the header line, not the email 
itself.

One rule sets the background of any message from Dr. Murphy to green.
Another sets the text of any message sent to 'Appointed' to red.

You can perform multiple actions, and have multiple criteria. Mail's rules are 
quite powerful.
