I think what's going on is that something's causing the ethernet settings to be locked; and when the OS tries to use it it's got to see it as 'new' hardware. The MAC should NOT be changing; that's set in the firmware of the Ethernet port, and IIRC there's no way in OS X to spoof it easily or out of the box. This smells like a failing ethernet chipset on the logic board.
