I hate to break the news to you, but in general, G5 PowerMacs are gas-guzzlers and run pretty hot. I had a 2.0 dual for a while, and it definitely heated the room, even on standby. And I'm in coastal Alaska where it barely breaks 65F in the summer!

That said, you are right, definitely avoid the water cooled models, they can be problematic, especially if it will be running unattended for long periods of time. And a lower end video card will also help with the power draw, I had a pretty high end ATI (X300?) in mine.
