Sure, you can just copy the single disks and be happy.
I don't know more about the HPT374, but my guess is that it needs some 
firmware download from the operating system to operate in RAID0 mode.
Seeing the relevant lines from 'dmesg' may be useful. See also

g4u uses full disk images, starting from byte 0 to the last byte, and then 
compresses them using gzip. Whether or not that's compatible wo the 
Windows "Self Image" utility remains as a question to the authors of that 
software, I cannot answer it.
