Those features already exist in Gaim. Goto to preferences --> plugins --> check the "WinGaim" plugin, then go to the plugins-->WinGaim preferences screen which should appear. Although, it is a bit annoying that minimize to tray doesn't provide a way to minimise IM/chat or away windows to tray.
