Firstly, yo don't really get the "background" of the seven knights quest until the end when you've actually defeated them all seven times. I highly recommend you do this, as you get a different item each time. Secondly, yes, there is a gem in the first Silver Crest quest, and there is currently no other way to get it. However, there is a rumor that there is going to be a different way to get all three gems in the future. For now, just keep slaughtering those statues. Good luck!
