Ken, The acceleration thing you're talking about is more a side effect of the nonlinear power curve of engines, where they produce much higher power at certain RPMs than you would expect from a linear graph. It's got nothing to do with the gears; the gears are just a fixed ratio that convert the engine RPM to pavement speed. Here's a wiki page with a bit more information about the power curve:
