The guy from the adventurers collective only wielded one weapon, though I think he might have had a dagger with him. A lot of characters do that in sryth, they carry two weapons, but they generally use the bigger of the two, for example, if the guy in the wide-brimmed hat was carying a sword and a dagger, he'd use the sword. As for deathless ghouls, they're actually fairly easy to kill, they don't fully heal unless you get really uunlucky, at least not from my experiences, but they take quite a while to kill because they heal probably between 3 and 10 percent HP a round.
