Sure have. It still remains one of my favorite movies from the 80's.
As far as Top Gun games goes none of these are accessible, but there has 
been a handful of them released for sighted gamers. There was the 
original Nintendo game  Top Gun which I played quite a bit. Later around 
1995 a PC version of the game came out for Windows 95 with a better 
story and much cooller dog fighting. A sequel game, Top Gun Hornets 
Flight, came out but the game play was pretty poor. The story line for 
Hornets Flight was alright, but the physics and general game play didn't 
react well to end user commands. There is a Top Gun III game out for PC 
gamers, but I have never tried it.
As far as creating an accessible version I wouldn't think it should be 
too hard. It all depends on if you want the arcade feel of the Nintendo 
version or the ritcher flight simulation feel of the Windows 95 
version.  If you want the true flight simulation thing, and then you are 
talking some serious math and physics involved in doing 3D flight 
control and air to air combat.
