Those are actually toggles across the top of the screen. Slide your finger down a bit, and you should be fine. The manual is the tutorials that appear at the beginning of each level in the first four gardens.

The second one is acorn toggle on off. Then I have also notice that there is no manuel included in the game. I do know that the other games I have for my iphone have manuels to tell you what all the options are for and what they do.
