Well, the only way to know for sure is to buy them and try them, but I can say 99% of the time they won't be accessible. Not only do you have to worry about the fact that things like the menus etc won't talk most of the games out there for Mac are emulated. That is that they are run through a specific Windows game emulator like Cider which doesn't communicate onscreen information to VoiceOver. This pretty much insures the fact that even if the display was presenting straight text you couldn't read it with VoiceOver because Cider like all emulators doesn't expose the onscreen information to the accessibility APIs.

Plus keep in mind mainstream gaming is highly graphical in the first place. Most first person, third person, and strategy games are inaccessible because they require sighted assistance in aiming weapons, moving around the game world, and so on. So you are pretty much out of luck if you are thinking of going down the mainstream gaming route.
