I don't know about performance but I don know a way on how to compile evolution without compiling the whole garnome package. The is actualy quite easy. What you need to-do is enter the desktop/evolution folder and doing a make install. This will build evolution and all it's required components which are quite a few if I look at the dependency list in Makesum. You do need to adapt the gar.conf.mk file first to make sure that compiler settings and locations where the software is built are set correctly.

We're using RHEL4 which is distributing Evolution 2.0.2 and I want to provide an updated version (2.6.1) without having to update the 100+ desktops themselves.
