For some reason, I've never acquired a taste for grits & greens - two Southern staples. A few summers back, I attended a family reunion (Floridians) held in Asheville, NC at a guest ranch style of lace. One night, greens were on the table (all food served family sytle) and I tried them (with a small bit of pepper sauce). I have been missing out on something - good they were!
As for grits, I never had a great taste for them - evn though they were a staple at home on Sunday mornings (Dad loved 'em). A few weeks back, I was at a nice restaurant out here in the Austin (TX) area. The pork loin was served on a bed of Southwestern-flavored grits. The consistency was akin to good mashed potatoes (i.e. not soupy) - good they were! As for fish - this is one Floridian (Even though I've been in Texas for 32 years, I'm still a Floridian - native born - and a Southerner) who happens to be allergic to fish. So give me shrimp, oysters, crab (it had better not be imitation), clams, lobster, crawdads, calamari & conch! I'll imagine while y'all fry up the fish, I'll help fish for it. Does the crustacean side of seafood go with grits? I'll generalize that it does - since it all can be covered in a Creole tomato sauce & served over rice. Give me molasses for the biscuits (clear or dark Karo if no molasses). Don't forget the iced tea with lemon or lime - I'll sweeten it myslf, thankyouverymuch. It's 11:07 PM & now I'm hungry!
