The only time I have ever seen a watchdog timer error was with a
hardware failure on the motherboard.

I suggest loading it (and the NICs) into a bare bones box and see if the
error goes away.

Our GBflash has locked up twice in one month with these errors listed in
the log, although the machine is still operational (can login etc) it
will not pass any traffic.

Has anyone seen this error or anything similar?
