Choosing an organisation is really up to you, I would reccomend choosing an organisation that specialises in a field you enjoy. If you really enjoy coding, maybe OpenMRS? Afterall, their catchphrase is "Write code, Save lives" Maybe you like music, The MetaBrainz Foundation (My favourite) has really cool stuff.
