Not necessarily. Some may do so, while others won't.

I would expect most contributions to be external to the GCI website (like a
pull request), with most communication on gci website being accessory.
If you want some of the data you sent (and you didn't keep a copy), I would
recommend you to fetch it before it is closed.

If by "data" you mean the registration information, rather than the task
submissions, do note that mentors don't have access to that, they were sent
to Google. The Org will only be able to see your nick (plus anythngn you
told them in a message, obviously),

Google usually destroys the website some months after the contest
completely finishes
