Not at all. Mentors do not see the "real name" field, just the nickname. Perhaps it is available to Org Admins, but I don't think so.
Look at the user agreement you were presented when signing up (you kept a copy, right?). I think you will find that it says the username will be public, but the "personal information" will be processed by "Google’s trusted service providers" i.e. not the Organizations. The organization would need that you told then in order to know that both nicknames belong to the same user.
