I think Tom's correct (I haven't tried it), but if you're using Yorba's Daily Build PPA, you shouldn't have to do that. Installing from there will install Geary just like a normal app.
If you're using Unity, click on the Unity icon in the top left-hand corner, search for Geary, and launch it. When it's running, right-click on the Geary icon in the dock.
