Matt,

you may want to let the sand dry out.  Knob-tails are
a desert gecko so may have troubles at some stage if
they are in a constantly wet environment.  I have
baby-sat a number of knob-tails and they happily
consumed cockroaches (Australian ones, not the
monsters that you Americans are known to breed).  Once
they get used to you they will stop being so shy about
eating in company!
