I can think of a couple of things.

First: temperature. If the temp is too cold the gecko cannot properly
process the food item. What temps are your geckos kept at?

Second: illness of some sort. Parasites or other internal ailment can
cause this sort of trouble as well. If your temps are correct, then some
sort of exam (fecal typically) will isolate the problem and a treatment
recommended.
