There is also an environmental and a pcb friendly reason to leave copper in unused areas of boards. The reason is that copper left on the board is copper that isn't placed in the solvent. Thus the solvent lasts longer (pcb manufacturor friendly) and the copper doesn't have to be reclaimed from the solvent (environmentaly friendly). I would ask your pcb manufacturor though if they prefer a solid plain, isolated little squares or total removal.
