I'm no expert, but you might want to use several - ought to help achieve a lower inductance connection. Also, the plating inside a via starts at no copper.. the tracks on your other layers, which start with a certain weight of copper, and are plated up from that. Unless the plating process is more aggressive in vias, this ought to mean your vias has less copper thickness.
