I use Ethereal and I love it.  It's fairly stable (crashes every now and
then) but overall it's one of the best i've seen out there.  It has a good
setup for filters, breaks up the packets for you in humna readable form, and
highlights the cooresponding data in the actual packet.  It also gives you
the option to view the traffic in real time or capture (and then export to a
file).
Haven't played with sniffit though.
