I would actually recommend RedHat 7.1. As far as the interface (GUI) I would recommend typing "lynx -source http://gognome.com/ | sh" as root. This will give you the newest, latest, greatest, gnome desktop. I think you will begin to see this desktop a lot of places. Including Sun's Solaris! Solaris 9 will be shipped with Gnome. The desktop is great and comes with updated versions of many applications. I can send you screen shots if you would like.
