Gentoo Linux - I like it because it helped to learn more about how Linux is built and installed from a boot-strapping perspective. If you wish, you can compile everything from source. I find this allows me to inspect any software before I install if I wish and to know with certainty what is going on during the install from a minimal standpoint, without any kind of installer process getting in the way.
