A good solution for DHCP assigned IPs on your mail server is to use a dynamic DNS service like www.dyndns.org. You run a background daemon on your mail server that tells dyndns.org when your IP changes. Sure, it is possible that a minute or so will go by between updates, but it is better than manually updating your DNS.
