I've done quite a bit of research on this. Here's where I'm at now:

kroupware.kde.org: the Kolab server essentially will operate as a replacement 
for MS Exchange. You can use Outlook with it, if you purchase a connector for 
it. Per-seat charges apply. Evolution too. In fact, the connector is put out 
by Ximian.

Aethera (seen on slashdot this weekend) is a cross-platform 
email/calendaring/etc. client. Someone on this list raved about it a few days 
ago. They expect to have it able to talk to kolab in a few weeks.

My money is on Kolab and the KDE client, or if windows-bound, with Aethera. 
If the customer is willing to pay for the connector, then Evolution is what 
I'd use.

There is a free connector (Multisync) in the works, it syncs with Evolution, 
and I posted today on their list about Kolab. I hope to know about this soon.

There are non-free exchange replacements out there, but who really wants to 
pay for software?
