Congratulations on your library opening and having an office with four wall and a door. They even gave you a window! That and the air conditioner register in the ceiling are good indicators that you are not in a broom closet.
It's too bad you got those hard drives and used them as is! Think of the really cool things you can do with those terminals with the software you have and know: real persistent user accounts, public publishing by the patrons, email, the list goes on and on. The best way to demonstrate free software is to take advantage of it. Set up regular old Debian with the Knoppix configuration files, it kicks win2k's ass. I like your roaster idea too. For interfaces, why not just use eroaster? See here, if you are not familiar with it: http://www.hillnotes.org/fixit/screenshots/36.html Just make a button on the desktop, called "make free CDs", that pulls up a browser with instructions and eroaster. You can get fancier than that, like making serving it all on the toaster machine and having a script that pulls eroaster when the distro is clicked, when you have time. Making software available to anyone who walks in with a CD is a really good idea. You might even sell CDs at media cost. Go for it! Abbeville rocks.
