Hi John: I also recommend OSCommerce. I did some development for that application in the past and I found it to be nicely organized and easy to understand.
A great advantage of OSCommerce is the many plugins that are in active development. Another application that I studied a few years ago was exhox3. I looked at it but it had a few bugs. It might be doing better now. If I remember correctly, the shipping modules was the feature that called my attention, particularly DHL. But, it was a while ago.
