I was poking around at the FUSE entry on wikipedia and I found this
article (
http://www.movingtofreedom.org/2007/02/21/howto-encfs-encrypted-file-system-in-ubuntu-and-fedora-gnu-linux/
 ) which suggests that you can use EncFS on top of GmailFS or, implicitly,
SSHFS.  This would let rsync see the remote files unencrypted, while both
the tunnel to the remote system and the remote files are encrypted.

You might want to look into these solutions, though I wouldn't know about
performance.
